Ɛto
Yam Eto, also known as Baayere Eto or Ɛto, is a traditional delicacy often used to commemorate birthdaysand other special days and events.
Ingredients
• 3 pounds of yam, peeled and cut into cubes
• 2 large onions finely chopped
• 4 large green pepper
• Half bottle of palm oil
• 3 eggs
• Salt to taste
• Water
Preparations
-Peel, wash and cut yam into suitable sizes(yam should be of similar size to ensure even cooking).
-Cover pot and let it simmer gently for about 20-30 minutes or until the yam is tender.
-Pour out rest of water used to cook yam when it is ready.
-Heat palm oil and chopped onion in a large pot over medium heat.
– Grind onion, pepper and salt in an earthern ware.
-Gently add cooked yam to onion, pepper and salt and mash.
-Mash yam until it mixes well and serve.

Waagashi

Waagashi is a type of West African cheese made from cow milk. It is commonly made by the Fulani people, especially those from Northern Benin.
Ingredients
-1 bottle of fresh cow milk
-2 cups of apple cider vinegar
-Sorghum leaves for skin colouring (optional)
Preparation
-Mix fresh cow milk with apple cider vinegar and leave it for sometime.
-Put the mixture on fire at low to medium heat until the milk forms completely.
-Then strain in a colander to remove all the water and your cheese is obtained.
-Soak cheese obtained in cold water for a few minutes (5-10 minutes).
-After removing the cheese you can optionally dip it in boiled red leaves.
-Boil the cheese in the red solution for 10-15 minutes. (Depending on how one wants the red to look).
Serve the fried Wagashi with the West African Suya spice.
