Akple
Akple is a Ghanaian dish made from corn flour. It is often served with pepper or stew soup made with various ingredients such as red oil, tomatoes, onions, and spices. Akple is a filling and nutritious meal that is popular in the Volta region of Ghana.
Ingredients
1 cup of corn dough
Water
Salt to taste
Method
-Mix a small portion of corn and add it to boiling water on fire to form porridge
-Add a little salt and get a wooden spoon or stick to stir well.
Scoop a portion of the porridge and set aside
– Add corn flour to remainder of porridge on fire.
– Stir to desired texture and add the porridge earlier scooped
-When the mixture becomes fairly solid, take a calabash (or bowl), dip it in water and put a spoonful of the dough into the calabash, shaking it vigorously and rolling the dough inside into an oval shape.
Serve with hot pepper sauce and fish or tomato stew or okro/okra soup or stew.

Tamarind drink (Saamia)

Ingredients
• 100 grams of tamarind seed (peeled including seeds)
• Water
• 50 grams of ginger
• 2 grams of alligator pepper
• 3 grams of cloves
• Sugar to taste
Preparation
• Peel and wash ginger, cloves, alligator pepper and blend.
• Soak tamarind overnight (optional)
• Boil water and pour over tamarind
• Soak for several hours
• Mash the mixture for the pulp to come off the seeds
• Add grounded or blended spices to the mixture
• Add water and boil for 30 minutes
• Put off fire and allow to cool
• Sieve and strain to get rid of particles (spices and pulp)
